Greek Chicken Salad

OK, its spring break and the kids are gone.  You know what that means, don’t you?  That’s right!  It means that Lisa and I eat even better than usual!!  So let me tell you what was on the menu for tonight!!

First I started with boneless, skinless chicken breasts.  After thawing them, I put them in a casserole dish with a marinade.

Before I tell you how to make the marinade, let me confess; I never measure anything.  I just put the ingredients in until it feels good.  I’ll do my best to give you the measurements.

Here’s the marinade:

1/4 cup of olive oil

1 tsp greek seasoning

1 tsp garlic powder

2 Tbs red wine

2 Tbs lemon juice

1/2 tsp thyme

1/2 tsp basil

1/2 tsp oregano

1/2 tsp rosemary

Combine all of the ingredients in a small bowl and mix thoroughly.   Pour mixture over chicken making sure that both sides are coated.  Put chicken in oven at 350 and cook until juices run clear.

Next is to put the salad together.  Since we spent the morning at the Corpus Christi South Side Farmer’s Market, we had some really good produce to work with.  To make the salad I started with some fresh spinach.  I then added some red leaf lettuce and then some green leaf.  After mixing all the greens together then I broke out the good stuff!

I bought some vine ripened tomato today at the market, I cut those up into some nice sized chunks (less than a mouthful) and put them on the salad.  I opened a small can of sliced black olives and put those on the salad as well.  I followed that with half of a cucumber, sliced and then quartered.  Of course I topped the whole thing off with a large handful of Feta.

Now that the chicken is cooking and the salad was put together, it’s time to make the salad dressing.  I make my dressing in my blender.

1 1/4 cup of olive oil

1/3 cup of white vinegar

1/3 cup of lemon juice

1/3 cup of red wine

1 tbs greek seasoning

1 tbs garlic powder

1 tsp thyme

1 tsp oregano

1tsp basil

1 tsp rosemary

small handful of feta

Mix all ingredients in the blender and liquefy.

Once the chicken is done dice the chicken into bite sized pieces.  Serve on a plate while the chicken is still hot.  Enjoy!
